Okay, late to the party but catching up. I wanted to sign up for the SNAP challenge when I first heard about it but work got in the way. When I learned it was starting today I called Misty and she got me in. Luckily I had only eaten an egg for breakfast. I had to skip lunch since I did not have time to go shopping and when I finally did go shopping I overshot my budget - I guess I should not go shopping when I am hungry.
My total came to $22.43 but in that were two chickens so I will place one in the freezer and that will bring me under $20.00 as the smaller one was $3.20 (I may need that $0.77 later in the week...I will let you know).
Getting home and reading these blogs I realized we all bought the most economical foods we could think of - chicken, rice, beans, potatoes, eggs, vegetables and milk. It does not promise to be an exciting week of meals but sustaining. I also bought four packs of Ramen noodles, I know they are not the most nutritious food product but they are cheap and filling, and I splurged on some cheese
I arrived home very hungry so ate some cheese and milk and cooked up a package of Ramen. Then I set out to cook and debone the chicken and make a stew with some stock I will make and most of the vegetables. That should get me through the week. I did some math as well and look forward to speaking with the nutritionist on my meal plan. It seems to me that with everything I bought this will be a true diet in the sense that there does not appear to be enought calories in my daily allowance to sustain someone 6'4" tall. I will keep you all posted as I am off to make some stew.
